Urban Food Symposium
http://www.luc.edu/sustainability/about/news/urbanfoodsymposium/Thought leaders from Chicago, the Midwest region and across the nation will explore social justice, environmental and nutritional issues of food systems and offer innovative ways to approach local, alternative solutions from 9 a.m. to 3:30 p.m. on Saturday, September 7 at the Urban Food Symposium at the Loyola University Chicago Institute of Environmental Sustainability and the Mundelein Center.
Saturday’s agenda is highlighted by a municipal policy discussion featuring representatives from Chicago, San Francisco and Boston as well as presentations from more than 10 key players in our area’s food systems. A fast-moving format will allow for an exciting range of innovative opinions and sharing of best practices.
Also on Saturday, there is the chance to tour Loyola’s new, state-of the-art Institute of Environmental Sustainability. Designed by Solomon Cordwell Buenz , a national leader in sustainable design, it is Chicago’s largest geothermal complex. Labs and public spaces will be staffed to give guests a greater sense of the scope of Institute of Environmental Sustainability programs. A wide range of food-focused businesses and non profits from throughout the city will have booths for guests to learn more about the work they are doing.
The kickoff to the Urban Food Symposium is Friday, September 6 at 6 p.m. at the Peggy Notebaert Nature Museum. The evening includes a reception with food, cocktails and local appetizers, a keynote address from Barton Seaver, chef, author and director of the Healthy and Sustainable Food Program at Harvard’s Center for Health and Global Environment and a final opportunity to enjoy premier access to the Museum’s Food: The Nature of Eating special exhibit before it closes.

"To get long" meant to make do, to make well of whatever we had; it was about having a long view, which was endurance, and a long heart, which was hope.
