I wish I knew which restaurants and which dishes the meat ended up in.

Me too, so I could eat there :)

Uh, and what food production isn't? These are not endangered species. Clearly there is a market for this stuff and it will be underground as long as it's illegal. Sweden and Scotland manage market hunting very well and you can obtain wild game for restaurants and grocery stores this way. In the US market hunting was totally anarchy to the point where species did become endangered and instead of regulating it appropriately, it was just banned.

    Hi,

It is not illegal to sell raccoon. I have bought it for 99 cents a pound in Chicago with head, paws and tail on. What may be illegal was how this guy handled and processed it.

I have a friend who grew up in a Chinese household whose parents recall eating 'coon in China. I'll bet if you made some inquiries and offered to bring a legal coon, they may just make it for you.

If you want to taste coon without having to prepare it yourself, the last Sunday in January is the annual coon feed in Delafield, Wisconsin. Information will eventually be post on Events.

There are turtle farms in the USA with a small amount consumed here and the balance going to Asia. There have been efforts made to try to make this illegal. Since there are so few producers, just as there are for foie gras, the plurality who don't want it overwhelms. It is still legal because those in aquatic agriculture banned together to fight off this ban.

    Regards,
