    We've purchased foie gras from the market @ Binny's Lincoln Park location which is absolutely delicious. Would like to have some to serve for NYE, but don't have time to head down to Lincoln Park. Does anyone know of somewhere in the western suburbs that carries a good quality foie gras?

    I don't know if they carry it for sure, so call ahead to check, but my bet would be on Standard Market in Westmont.

    Great idea... thanks! I was just thinking about checking out Whole Foods too.

    Whole Foods is empty when it comes to some things, including foie.

    Standard Market should have foie gras in the freezer table near the butcher. This pic was taken in the summer, so you may want to call to make sure they still have it. Good luck!

    Have you tried other locations of Binny's? Please post where you did find the foie gras in the western suburbs if you did find it.

    Binny's closed out their deli departments some months ago.

    Standard Market has it; runs about $35/lb as I recall. We make do with TJ's chicken liver pate, but of course that's a rather pale substitute.

    Whole Food's CEO is way too politically/environmentally correct to have anything to do with foie. :roll:

    If you plan ahead, Hudson Valley sells Grade C Foie. Call, it's not listed on the website.
    If you pan seer, no need for Grade A or removing veins.
    When your Foie arrives, you have two options, freeze in it's cryovac packaging until usage or you can slice and freeze the slices for usage within a month or two.
    I do not make a cooked Pate any more preferring to take a whole Foie wrap into a torchon with food grade cheesecloth and cure in a Kosher salt.-Richard
    BTW, the Owner of Hudson Valley has a very nice book with excellent methods and recipes of how to work with Foie. I found my copy on eBay.
