Food in Finland (especially Tampere)?

I am currently in Finland for 3 weeks, perhaps longer. We're in Tampere but may visit Helsinki, Turkuu and other cities. Has anyone been? Any restaurant recommendations? Any food or drink (i.e actual dishes or drinks) recommendations? Anything is welcome. We're trying to find local dishes and have had some success but any advice is appreciated.

I was in Helsinki over the summer, and if it's still happening in the winter, the market on the waterfront at the end of the Esplanade is amazing for food options. I'm guessing the fresh produce won't be there in the winter, but hopefully all the people selling various concoctions involving fish and reindeer still are.

I'll second merkay: the food from the market on the waterfront is great! I went in mid-December a few years ago and pigged out on pickled fish. I'd say look for a farmer's market in Tampere--google says look here.
