Secreto is Skirt Steak from a pig. There is only 1 per animal. Usually under 1LB. You have to find a meat market that gets the whole animal and breaks it down. I called Great Lakes Packing on Lake. I was told they get 100 pigs a day. They had no clue.
Ronnie suggested Butcher & Larder on Milwaukee. $ 19.99 per LB. Publican, Fulton & Green St. $ 6.99 per LB. They got a animal in that A.M. I picked up the cut the same day. You have to call when the pigs come in and ask for the cut to be put aside. Otherwise a waste of time.
The Publican Secteto was 3/4 of a LB., untrimmed. They trimmed the 1st piece, perfectly, no fat or silver skin. They were sloppy on the second, top side very good, left too much fat & skin on the bottom. Which they hid. I paid for the NET weight.
Weber charcoal grill, using hardwood chunks. A little olive oil, salt, lemon pepper & granulated garlic.
The pieces were 1" wide , 10" long & 1/2" thick.
1 minute each side, directly over the coals. 1 minute indirect each side. Perfect.
