    I adore the soft, chocolate-covered gingerbread you find in Polish groceries, often in two- or four-cookie packs, near the register. They are dark cookies with dark chocolate, about half the size of a playing card, without the papery bottoms or candied fruit/citrus. I could swear someone posted a recipe once but I can't find it here. Does anyone have a recipe to share? Thanks!

    Katarzynki - that's it! Thanks! I'll have to attempt making these. But what's the difference between the two? The recipes look similar, but kararzynki is the name on the package I usually buy.

    I realize I'm a bit late to this, but for posterity's sake, "piernik" or the diminutive form "pierniczki" just means "gingerbread." Katarzynki ("Catherines") are a subset of gingerbread with a certain shape (three bumps on each side, like you can see here). They may or may not be covered with chocolate. If you are interested in exploring Polish gingerbread, look specifically into "Toruń gingerbread," which is famous in Poland (and beyond) for its gingerbread (and I believe Katarzynki originated there, as well.)
