This came across my desk in one of those 2014 trend spotting newsletters. http://www.ensaymadaproject.com/
Is there anyplace in Chicago where you can buy them? They sure look delicious but I can't imagine them being nearly as good being shipped from California as they would be if they were freshly made here.

I haven't had a chance to try ensaymadas from various places around Chicago. You can find traditional ones at a Filipino bakery like Simple Delights. Other bakeries that likely would have them are Mariegold or Mom's Bake Shop.

Ensaymadas are mentioned in Yelp reviews about Cakes 'n Crumbs in Morton Grove and Uni-Mart on North Clark in Andersonville/Edgewater.

Call ahead to any of the places mentioned above to confirm availability before traveling there.

    Hi,

A lot of Filipino stores sell them.

It is on my short list of things I want to make. My friend Helen's Grandmother made them. It is a brioche dough rolled out then lavished with butter and grated Edam cheese sprinkled. Rolled up and put into pans, then more butter, Edam cheese and crystal sugar sprinkled on top.

The plan is for me to make the dough, then Helen will help put it together. She had always watched and never made one.

    Regards,
    Cathy2

Oh that sounds like a fun plan, please let me know when you plan on doing this, maybe I can join you. Maybe we could try something savory as well.

I have a couple recipes using brioche dough and an easy croissant dough to make ensaymadas. If you need a recipe, let me know and I can type it out for you. They are delicious and I made some for the holidays not too long ago.
