    I moved here from Boston 20 years ago, and I had the same misperception. My first trip to Carsons was also my first experience with baked and slathered, and it was nothing at all like what I was hoping for. I thought Chicago would be similar to either Memphis or Kansas City. Fortunately I quickly found some good places on the South Side, but they were far fewer in number than I expected.

    My last trip to Honey One was a couple weeks ago for lunch, and it was as great as ever.

    Carson's ribs are indeed slow smoked, and have a nice chew on the bone. If you're looking for examples of ribs that are baked (and possibly boiled beforehand) and fall off the bone, I believe the most well-known are Gale Street Inn and Twin Anchors. They are two of the oldest continuously-operating restaurants serving ribs in Chicago (est 1963 and 1932, respectively, vs 1977 for Carson's). Another is Miller's Pub, which opened as a bar in 1935 and is well-known but not specifically for their ribs.

    QFT. It has been many years, but I used to frequent the Deerfield location of Carsons as a fairly regular take-out customer for those pork chops, and I always enjoyed the chopped liver set up for a snack while waiting for the takeout order to come up.

    Just happened to hit Honey 1 last night myself around 7pm after a few months absence. I did enjoy the small ribtip/hotlink combo, but it seemed a little drier than normal as if it had been sitting around for a while. The aquarium was shut down, so that makes sense.

    Eight plus years of feasting their tips and links, it inexplicable how in today's scene this extraordinary bbq is available with such ease, makes me a lucky man and a part of Chicago...well...inexplicable.

    I also enjoyed a Polar Vortex "small" combo this week. Delicious flavors, attractive tips, warm service. Timing being everything with barbecue, I did miss the fresh off the smoker window, and the links (reheated in oil) were still cool in the middle. This was offset by the fresh fries being much better than remembered.

    I also had a lackluster meal today...I was picking up our new (old) sign at "The Neon Shop" next door...it wasn't ready, so I sampled some of my competition. Ribs, Hot LInk & wings....I'll have to say - the wings were good. I waited about 15 minutes for them, and I can tell you almost 100% - they were the only fresh thing in my bag...5:30pm - smoker was cold. Not just with nothing in it - but cold. I know what a fresh pit looks like, and I'm certain it wasn't even burning a fire today. My ribs were covered in a not-so-great sauce. My link was served in a paper boat, filled to the brim with sauce and then wrapped in wax paper - it looked like a hot dog in ketchup; odd, not natural, blasphemes! Ribs were ok, for reheated ribs, but covered in sauce...and the membrane wasn't pealed so it they had an odd texture. Now, this (membrane) doesn't ruin a fresh slab or ribs - but on a reheated slab of ribs - the membrane tastes (texture) like wax paper.

    Service was also very poor: the guys behind the counter were chatting up a friend and had no interest in my order - I value service, even at a small BBQ joint. If talking to your friend about his new TV that you're "fittin' to watch tha' fight on this weekend" is more important than my order - let someone else work the counter that cares about the food and will talk to his friends after he's done being paid to do a job.

    I've heard great things about this place from people who's opinion I respect, and I understand that Q varies in quality - but a few things like: the over-saucing of all of the meats (if I do go back, I'll ask for everything dry), the membrane left on the back of the ribs, and the obviously re-heated food didn't impress me enough to try them again.


    UPDATED REVIEW!!

    I was driving down Western Ave. today to pickup a van full of BBQ meats (uncooked) from Wichita Packing company (new location at 341 N Clarmont - just off of Fulton and Western Ave), and I smelled the familiar smell of oak smoke in the air...ah, Honey 1 was cooking!!

    I wasn't hungry, but had to stop by to give them another chance...my first 6 visits there left me unsatisfied, and frankly frustrated, as many a BBQ Guy I respect speaks highly of this joint - and I had yet to experience them in their glory..

    Today's meal redeemed all of that - fresh tips n links right off the pit, sauce on the side..

    Smokey, Fatty, tender, DELICIOUS! Nice work Honey 1, not better than a good Brisket - but damn good nevertheless...

    I haven't been to Honey 1 since I moved to Montgomery back in April. But I was visiting the in-laws yesterday around Touhy and Cicero and decided to take a detour before making the trek home. I always order the extra large combo and split it up for a few meals. Unfortunately, last night, for the second time, they ignored the fact that I ordered mine with sauce on the side. Of course I didn't check before we left and didn't find out until we were all the way back home.

    But I'm sure I'll survive.

    Stopped in yesterday. Have some bad news for those that love their Fullerton Ave. location. Was told yesterday they are pulling out and heading to Bronzeville on Stony Island. New place is getting zoning changes right now. They said the Fullerton Ave. neighborhood just isn't supporting their type of product anymore, so it's time for them to go where the neighborhood will support them.

    edit: and it doesn't matter if kenji is offended by this, it's the general tone that is a drag. There is so much good info here, it sucks that it is clouded by the constant "I know better than you, let me show everybody".

    If somebody said "It may be the new 43rd and Western location"........look how much gentler that reads than how it is currently presented. It's so "stuffy" around here. My......

    Mods please place this in a new thread...that's how this usually ends.

    I get it.

    I probably sound more harsh than I intend. But there are a few posts that clearly come across as correcting someone instead of "focusing on the place/food", which I have seen multiple times.

    Please, keep up the good work. I love this place. I wish more people did also.

    I wonder if there just isn't a market for aquarium smoker South Side-style barbecue on the North Side.

    Perhaps Honey 1 got lost in the shuffle amidst the proliferation of places on the North Side purveying iterations of Carolina/Memphis/Texas barbecue,

    Well, you could go to Honey1's new location at 746 East 43rd Street, once they're open there. After all, it's not like they're closing, a la Hot Doug's. Granted, it may not be as convenient to those on the north side, but still, it's a mostly-expressway drive from their old location. Google Maps says that will take 18 minutes, assuming of course that you're not driving on a weekday in prime commuting hours.

    Honey 1 at this Bucktown location is not closed yet. They're up and running on Western until the other place they are getting zoning changes opens it's doors.

    Seems you mods will always be here to correct or move or delete, so I think it's less important for me to be exact if you guys have my back. Doesn't bother me.

    If someone already had a photo of the new place how come they didn't make a post in this thread about the news? Just wondering.....

    FWIW, there won't be a sit-down dine in area at the new place on Southside.

    I keep baby wipes and a roll of paper towels in the car for my Southside BBQ forays. The two pieces of white bread and my furry steering wheel cover never take all the yumminess off my hands when done dining.

    As a someone without a car, Honey1 was my go-to for tips and links. It's going to be a rough loss for the neighborhood.
