The former M (and Lincolnshire Gourmet) space at Green Bay and Central in Highland Park has been rented, and we now have another contender in HP. This weekend was their very soft opening, and my son and I stopped in for lunch to check it out. He had his typical miso soup, edamame, and rice, and was quite content. I tried the oyster shooter, though I had ordered an uni shooter, but they didn't yet have uni. The shooter was very nice and balanced - not too spicy nor sour, but did focus the texture on the oyster. I then had the chirashi, which had delicious fish, especially the in-house made shrimp (no soggy over-gingery pre-cooked crap you find elsewhere) and the luscious super white tuna (escolar). My only quibble was the rice was served quite cold instead of the usually somewhat warm I am used to. After a long talk with one of the owners about the area and their plans we was very nice to bring over two pieces of sushi. They were albacore, lightly seared with a bit of ponzu and a small amount of pickled pepper on top and absolutely delicious! After inquiring about omikase for future reference the owner mentioned they will be doing two types - one the normal chef's choice variety, and the other a special occasion give-them-notice type thing where they will source more exotic and desirable ingredients.
I should also mention the menu is quite extensive offering quite a large amount of rolls and appetizers. The sake list looked good, though I didn't recognize most of the offerings.
