I saw these also over the weekend at Produce World in Norridge. Only question is ... what's good to do with them?

I always see fresh olives at Marketplace on Oakton and I always wonder who the market is. Does anyone here cure their own olives? What's the real benefit? I get so many delicious varieties of cured olives in markets, I've never felt the urge to cure my own.
