I'm planning this trip on Trip Advisor. I'm consulting the Italy board on Chowhound. I cross-reference with other travel sites. I check the reviews of the reviewers to get a sense of their tastes and expectations.

Any other suggestions for ensuring we have killer food and wine? We are not looking for gourmet or fancy, just really good non-touristy places. Not much recent on here which is why I'm asking. I promise to report back when I return home.

I just got home from spending two years in Italy, and I'm already yearning to go back. Unfortunately, I'm not so familiar with those three cities as far as restaurant recommendations. We had a wonderful dinner in Rome at a restaurant we stumbled upon called Life (haha, i know not a very authentic name but you'll see that "america" and "english" have become quite a trend in Italy these days) Fresh, delicious, and fairly priced is really all you can ask for in Rome, as the tourist rip-offs are extremely hard to escape.
As for wineries tours, I can probably help you there if you give me a more specific region you are looking to visit. I managed to visit over 30 wineries between my food and beverage masters program, and on my free time.
