I'd like to try some of the red rice wine lees recipes, but first I have to brew some red rice wine! Two ferments are required:
1) wine starter cake;
2) red rice wine yeast.
I can find something approximating the latter online at health food stores, but I haven't found the real, authentic stuff otherwise. From my time in China, I remember (vaguely) about 1), but I haven't been able to find it online.
Any suggestions??
