I'm no brunch expert, but I very much enjoyed multiple brunches at Big Jones and Longman & Eagle. The "no waits" might rule out L&E, though.

Owen & Engine has become my go to brunch spot of late. Outstanding food & drinks, nice vibe and friendly staff. They do take reservations (via their website) and while not a quiet venue, it is certainly not so noisy as to impede conversation.

We're not big brunch people, but when pressed to join in we do enjoy Perennial Virant. Not sure whether they have enough vegetarian-friendly options for you, but it's a nice room and conducive for conversation.

I know that for a while, Anteprima was doing Sunday lunches 12-3 on Sundays. It wasn't a special lunch menu, but rather, was similar to their regular dinner menu. And they were only charging $19 for any three courses, which was an even better bargain than their normally excellent $29 for any three courses for dinner every Sunday through Thursday.
