    Going to be a fun, delicious and moderatly spicy Jamaican themed Pitmaster dinner. Hope to see a few LTHers.

    Jamaican January Jerk Festival

    Greeting: Classic Rum and Coke with lime.

    Starter:
    Paired with Rum Punch

    Jamaican Beef Patties ala Annie Beck. Hint of curry, kick of heat, stupendously delicious.

    Main:
    Paired with The Marley

    Jamaican Jerk Chicken and Jerk Pork with house made scotch bonnet sauce. You will be instantly transported to the Islands complete with a warm breeze and Bob Marley sound track.

    Sides
    Rice and Peas, a Caribbean Classic
    Fungi, if Italian Polenta and Soul Food Okra had a love child.

    Dessert:
    Paired with Caribbean Romance

    Soft Smoked Maduros with Cardamom scented Vanilla Bean Ice Cream and fresh mint

    As an aside, I made a habanero hot sauce yesterday, one small taste and I started to tear up and perspire. Yes, this will be served on the side.

    Great dinner tonight! We got a half chicken and half slab of ribs per person, not to mention the other food. We took more food home than we ate! Great spice rubs, and the most perfectly cooked chicken I've had. Loved both of the fiery sauces.
