I'm up next in the Peterson Garden Project's Taste Test cooking class series. I'll be demonstrating one of my very favorite dishes that I learned to cook in high school as a budding gourmand. Its $25 and I promise you'll leave belly full and with a comfort food classic in your wheelhouse. Maybe some Polish beers and some yucks while we're at it?

The mother of instructor Eric May's best childhood friend, Wanda Kucharczyk, was a tremendous cook with a hand at both classical French technique and rib-sticking rustic Polish fare. One dish in particular, from the Polish side of her repertoire, really stuck with him; her Bigos: a rich & smoky stew studded with Kabanos sausage and wild mushrooms. The ever-generous Kucharczyks invited Eric to cook Bigos with them, and this early cooking experience became his time-tested recipe for entertaining large groups or cozy winter night's suppers.
