    Join me on 2/13/2015 at the DANK Haus for a cooking class in making big, puffy baked apple pancakes. We can make lemon or plum versions as well. You can participate hands on, or just watch, as you prefer. Then you can take what you learn and make a baked pancake for your sweetie on Valentine's Day. :D

    Hi,

    I plan to attend. Culinary Historians a few years ago had a speaker who reverse engineered Walker Brother's apple pancake.

    Here is a recipe for the Original Pancake House version that I found on a copy cat site. I've never tried this version of the recipe, but thought Cathy2 might be interested.

    Hi,

    Steve Katz reverse engineered Walker Brother's apple pancake. It was featured in the Tribune's food section during January, 2007.

    His recipe was calculated to up the protein in the batter using skim milk, additional gluten and egg whites. The pancake is a variant of a popover. He also replicated their two-stage cooking by setting the mixture at a low temperate. Then moving to a much hotter oven, which caused the batter to inflate.

    The 2/13/2015 class was a sold out event. We may repeat this event for Valentine's Day 2016, if there is sufficient interest.
