    In about a week or so, we should have a garden full of fiddleheads.

    My husband is wondering what they taste like.

    Is there a restaurant that is likely to have fiddleheads on the menu where we could taste them, before I start cutting them in our garden? I've never eaten fiddleheads, and wouldn't even know what I was aiming for in cooking them.

    Sort of a cross between green beans and asparagus. Be careful cooking them. . .

    First a good rinse is obviously needed. I then, generally do a quick saute in butter with garlic, s & p. Keep it simple until you figure out what you like about them, if anything. Think about very young asparagus.

    My first experience came when I was hitching a ride to work, a woman stopped and gave me a bag she had foraged down the ways from our house. I gave them to the chef, he was happy. I never found any reason to spend serious money in the market for them.

    We lived across the street from an asparagus field, so I was spoiled.

    If you'll be at the GNR dinner tomorrow night, fiddleheads are on Big Jones' list of pickles included on their platter of appetizers.
