    Our poblano/ancho plants really out performed our expectations and produced some beauts. This is our first year for poblanos and I need to put them up. I'm thinking of drying and/or freezing the harvest and am looking for recommendations. I found a thread where smoking them was discussed (drying then smoking speeds up the process) and will incorporate that for some of them. Others will get the freezer bag treatment. I really want to dry most of them.

    I've got a table top dehydrator but there's no way I'm going to be able to dry all of them that way (want to keep them whole). Anybody have any luck with stringing them up and letting them air dry? I've got a basement where I can run a dehumidifier to keep it driest and an attic.

    Any advice you can provide is greatly appreciated!

    I see no reply here yet, but at least let me put in a plug for the table-top hydrator. Every year I crush them a little in order to fit them in, and dry bunches at a time. If yours is like mine, you can buy extra trays and end up drying quite a lot at a time.

    If you're harvesting them red (and I hope you are, especially given this extended season), they become wonderfully smokey all on their own when dried this way.

    I should have replied to my own post; the table top dehydrator worked just fine! We didn't compact the chiles but my husband got creative with the trays. He loosely wrapped foil around the outside of the dehydrator to fill the gaps left by the height of the chiles. Took two days to dry them all.
