Pilsen Red Hots — Natural Casing Dogs & Fresh Cut Fries

A new source for properly prepared Chicago-style hot dogs opened recently in Pilsen. As of a few days ago their sign wasn't up and they were still putting the final touches on the interior (formerly Isla Azul) but their hot dogs already rank with some of the established big names.







It's a natural casing Vienna with the canonical condiments. Well constructed and balanced. Fries, prepped in house, are good but lack the creamy interior of my favorites (so far I've tried only a single batch at PRH). They may still be working out some kinks. The owner, a longtime Pilsen resident, is a nice guy and seems committed to doing things the right way. I hope they do well.

A shame this place in now closed. Are there any other spots in Pilsen doing a natural casing vienna? I saw this place called Small Burger with a bunch of Vienna signs but have yet to try.
