I'm not usually one to seek out salads, but overheated yesterday from running a race in the morning and then Pitchfork, I needed a lighter dinner. I've had this salad at Avec before, but it was especially satisfying yesterday: Werp Farms greens with slivers of wax beans, thick-cut cucumbers, sweet roasted pearl onions, puffed amaranth and a very light coriander-cumin vinaigrette. Amaranth is my new favorite salad ingredient; I prefer it over nuts for the firm texture and toasty flavor it lends.

My family and I meet at Avec for dinner once a month, and I'm fairly certain they usually have at least two vegetarian green salads--in addition to salads with meat--on their menu since vegetarian friends are sometimes invited to family dinner.
(Avec's other green salad right now has grilled peaches, endive, caciocavallo and pistachios--also tasty if somewhat busy for my preferences.)
