    For this week's Soup and Bread event, I'm making New England clam chowder and I plan to use salt pork, unsmoked bacon or alternatively, pancetta, although I'm concerned that pancetta may introduce more salt into the soup than I'd like to. But I've struck out finding salt pork at Butcher & Larder and Gene's and Paulina is apparently closed temporarily. Mariano's had salt pork, but it's Hormel and I'd prefer something a little better.

    Also, it has to be unsliced because I want a small dice, not thin slices. Anyone recall seeing any of the above at other stores/butcher shops?

    Have you checked GNR Fresh Farms on Touhy?

    Have you tried Zier's in Wilmette or PQM? Fwiw, I think salt pork will impart much more salt than pancetta.

    Zier's would be out of my way, but I'll give Fresh Farms & PQM calls, along with Joseph's and maybe Eataly. Thanks for the suggestions . . . and if anyone else has any, feel free to pass along.

    Sounds like laikom has your back on this. The main reason I suggested Zier's (first) is because Dave Zier makes his own pancetta in-house.

    for future reference, or in case you have time to head out to cicero: freddy's pizza has housemade, unsliced pancetta, and it's really flavorful....

    I can not speak of the quality, but Sam's Club in Evanston had packages of pancetta last time I was there.

    I very much appreciate all of your suggestions. Apparently, Gene's usually carries salt pork but doesn't have any right now. B&L sometimes does but not at the moment and their pancetta was running saltier than usual. Paulina is closed for a week. None of the other places I called or visited carry it (PQM, Olympic, Whole Foods, HarvesTime). Sounds like Fresh Farms does not, though I'll admit I spoke to three people who could not communicate or understand English very well.

    On the plus side, Joseph's is convenient for me and they carry pancetta in large slabs. I'll mix that in with the Hormel salt pork sold at Mariano's and I think I'll be just fine, particularly because I think pancetta tends to be saltier so I'd like to stay away from using all pancetta.

    I checked Fresh Farms for BR today, they only carry Hormel salt pork.

    Don't recall the brand, but its not the Hormel salt pork. Maybe Mastro? There's a section in the deli of different cured meats next to the other standard deli meats. Should be on the top shelf near soppressata, salamis, etc.

    Just wanted to follow up - I confirmed Mastro pancetta is still in stock in behind the deli case at Fresh Farms.

    On the plus side, pancetta proved very easy to find, including unsliced so I could get it sliced thick. Salt pork, which actually tends to run a little less salty than pancetta (so often easier to work with when making clam chowder), seems far more elusive.

    This was probably true with respect to the Hormel salt pork. And I also ended up being rather disappointed with the flavor so I largely relied upon the pancetta I purchased from Joseph's.
