    Hmmm,

    Looks like folks are playing it close to the vest with what they are going to bring (myself included). Just wondering how much chocolate is coming to the event? Usually, sweets tend to be chocolate this & cocoa that. I tend to bring a non-chocolate item but I am trending towards chocolate and vegan in the form of Wacky Cake for Sunday.

    I am in a quandary as I suddenly am allergic to milk/dairy. I also recently had a reaction to what might have been dark chocolate covered pretzels. I may make Coconut Sticky Rice Cake. Don't let my allergies stop anyone from making whatever. I'll only eat what I can.

    If everything else isn't chocolate then I will probably stick to my vegan offering.

    That sucks. Dairy is everywhere and in everything!

    Thanks for hosting Dobra.

    In addition to a delicious meal and desserts there was awesome conversation and activity. One of us returned from sumitting Mt. Kilamanjaro. And another kindly, read cards.

    Here's the recipe for the Wacky Cake from Cook's Country.

    I see 2 differences in this recipe and the one from Cook's.

    I used AP flour. I have no idea how this would work with GF flour. And I liberally applied non-stick spray to the baking pan. I have also successfully made a parchment sling to remove it from the pan when serving at an event. Cook's says to serve it in the pan. But you all know how that is and then your pan goes AWOL at said event. So the parchment sling worked well on Saturday night even though the cake was still warm.

    One other change I made is I don't like powdered sugar. I used castor sugar instead.

    Preparation Time:10 Min
    Total time:40 Min
    6-8 servings

    Ingredients:

    1 ½ cups all purpose flour or gluten free flour blend
    3/4 cup sugar
    1/4 cup baking cocoa
    1/2 teaspoon salt
    3/4 teaspoon baking soda
    5 tablespoons oil
    1 tablespoon white vinegar
    1 teaspoon vanilla extract
    1 cup water
    powdered sugar
    Instructions:


    1. Preheat oven to 350 degrees.
    2. Grease an 8 inch square pan.
    3. Place flour, sugar, cocoa, baking soda, and salt in greased pan. Whisk together.
    4. In in flour mixture make one large crater and two small ones.
    5. Add oil to large crater. Add vinegar to one small crater and vanilla to the other one.
    6. Pour water over entire mixture.
    7. With a wooden spoon mix all together until mixture is well combined and no streaks remain.
    8. Bake for 30 minutes.
    9. Let cake cool and sprinkle with powdered sugar.h

    What a splendid evening at the home of Cookie Monster. She served a delicious quiche and salad leaving enough room to sample the desserts. I echo the sentiment of good conversation and the added excitement of Tarot Card reading.

    Thank you Ms. Ingie for the kind words, there was so much dessert that I could barely walk afterwards. I would love to find out if you would be kind enough to share your recipe for the coconut sticky rice which I told gulped down after everyone left with a pot of jasmine tea. I loved all the desserts that we had at the exchange they were super tasty.

    The recipe makes enough for two 9" pans. Unless you're feeding a crowd, I'd cut it in half. I brought half the recipe to the exchange. It also tells you to use foil in the pans or oil them. I found that the rice cake stuck to the foil until it was cold, so next time I'll oil the pan and hopefully it will plop out.
