Where have they gone? Is it a hygiene thing, that nobody wants sugar someone else might have handled? So far I've tried Mariano's, Jewel and Walgreens (just because I happened to be there, it was a long shot). Neither classic cubes nor natural "lumps" you get in "better" restaurants.

I can mail-order, but Amazon prices start at about $7/lb, which seems excessive.

Has anyone seen them in store?

Odd, I'm always surprised that there's an expanding market for these as I've been seeing not only the Domino Dots in stores but also the demerara/turbinado ones.

Sugar cubes are dead easy to make. Sugar a bit of water, layer on parchment paper, press, score, dry either in low oven or sunny window sill. Break apart, store in dry covered container.

I watched the barista at the Long Room make them one morning, she used sugar in the raw/turbinado, and I did it myself the next day.

I googled "home made sugar cubes" came up with a bunch of recipe/techniques and videos.

    Its easy.

I was heading to Ravinia last night, so called Sunset Foods in Highland Park, they had 'em, I grabbed a box. I think we just got unlucky in the first two places we looked.
