    Fine French restaurants have come and gone in Chicago (and fine-dining restaurants have mostly gone), but one has lasted 30 years. Everest celebrates its 30th anniversary this month. The Michelin-starred restaurant opened in partnership with Lettuce Entertain You Enterprises on the 40th floor of the Chicago Stock Exchange building in 1986.

    Met him within days of him coming to Chi to work for George Badonsky on Maxim's. My girlfriend worked @ Tango in the Belmont Hotel and he was hanging around w/not much to do (or English for that matter). We took him to dinner @ Happi Sushi on Clark and Newport. This is 85 or so. Great chef. Gave me a recipe that was more of a drawing for pike mousseline that I still have from when he worked @ L'auberge d'ill in Alsace.
