Day before yesterday I saw a video on FB of this same guy de-boning a leg o' lamb. It was jaw-droppingly skillful, astounding virtuosity. Unfortunately, I was never able to get the URL of the video... if anyone has it, it would be great to post it here!

This dude's official meme name is Salt Bae if you ever need to search for some great takes on it.

His Instagram is straight up delightful as well.

More on the Salt Bae via The New Yorker . . .

at NewYorker.com, Shauna Lyon wrote:Since his first video went viral, he has released many others, on YouTube and Instagram, a few of which veer dangerously into the Ken Friedman realm. (Also, he has nine children!) The videos hit a sweet spot when it’s just Salt Bae going to town on a steak with his knife, a long sabre curved at the tip, like a bandolero—brandishing, smacking, caressing, and always handling his meat oh-so-carefully, with the goal of delivering a dish that is, in the end, pristine, with a little razzle-dazzle. Perhaps that's why the meme captured the Zeitgeist: even as we laugh at the Vegas-magician absurdity of Salt Bae’s shtick, maybe we’re also kind of digging what he’s selling. Who doesn't want a little magic along with the best steak in town? It seems to be working—Gökçe has steakhouses in Qatar, Abu Dhabi, Dubai, Miami, and, coming in early 2018, New York City.
