    JOAN'S PIMIENTO CHEESE
    1/2 lb. extra sharp cheddar (i like tillamook extra sharp, or cabot extra sharp)
    4 oz. roasted red bell pepper(1 large, or 2 smaller ones; weigh after removing skin/seeds) unless you can find fresh pimiento peppers. i won't the jarred ones or jarred bell peppers, they taste different(bad)
    1/4 c. mayo (.14#)
    a splash worcestershire
    a shake or 2 (or 3) of cayenne pepper (do NOT use red pepper flakes)
    a little chopped onion (1/4 of a med.size)
    to get the texture i like: use small holes on a box grater to grate the cheese. then put everything but cheese in a food processor and puree till smooth. then add the cheese and process just to mix.
    traditionally served at every southern cocktail party as a white bread sandwich. i use pepperidge farm thin sliced sandwich bread. 1 batch pimiento cheese will make 10 sandwiches = 1 loaf. if you want to serve it with crackers, make sure they are salt free or it will not taste good. baguette slices are also a good option. enjoy! and feel free to share the recipe.

    justjoan, I'm pretty sure she means her BiL is Nolan Ryan. Or Christopher Nolan. That's the only reasonable interpretation, I think.

    I'm so happy that I finally made it to this event. Big thanks to the hosts! I really think that having your food friends, music friends and friends over all at once is a brilliant idea.

    Loved the food, loved the music, loved the company.

    I don't know why we don't eat Louisiana food all the time . . . . it's certainly one of the happier cuisines!

    Ha ha ha. I meant NOLAn, as in, he's from New Orleans. What do they call themselves, anyway? Nawlinians?
