    While in Italy, my wife and I had the chance to indulge in Wild Boar over papparadelle. Is there a source for Wild Boar in Chicago that anyone knows of?

    I don't have an answer to your question but like you, I would be happy to know of such a source. I know of one Mexican restaurant that at least often has javalí on offer, so there must be a distributor in town. That place, Casa de Samuel, is discussed here:

    Boar in the connexion with Italian cookery has come up a coupleof times in recent weeks (perhaps you've done a search and already seen these; if so, scusate:

    TAC quick also offers a very tasty wild boar dish(see here)
    Hopefully a Chicago source will turn up. I'm still hoping DougMose will divulge where he procured the beast...

    Both Chicago Game and Czimer's Game carry Wild Boar. Czimer's sells retail portions, Chicago Game has restaurant size i.e. larger minimum order. Both sell retail. Just to make sure I called, Czimer's has Wild Boar deboned roast for $8.95/lb, Wild Boar burgers for $6.95/lb. Chicago Game has Wild Boar boned and rolled leg roast for $6.45/lb, but the minimum order is 6-8 lb. Chicago Game also has terrific sounding Frenched racks of Wild Boar rib chops for $12.50/lb, minimum two racks.

    Both Chicago Game and Czimer's Wild Boar is frozen.

    Incredible variety of everything upscale and/or hard to get. Fresh foie

    Gepperth's usually has a good selection of wild game (or so it says on the windows).
    Not sure if I've seen boar, but it's worth a call.

    It is not really wild boar, Das. :wink:

    At any rate, Sticky Rice and Spoon Thai also make phàt phèt mũu pàa using skin-on pork leg in place of wild boar.

    In response to G. Wiv's resource of Czimer's...they were charged 2 years ago for selling tigers and leopards (federally protected and endangered species) and sold them as "lion meat", and made a nice little profit on it. Further, they are suppliers of certain meats to Fox & Obel, so I won't shop there. Many might not care, but thought I'd provide the info and let all decide for themselves.     Fox & Obel is always a great source for hard-to-find items, including wild boar. Call them in advance and they will get it for you. Chicago Game might be a little less expensive, assuming they're willing to sell you a consumer-size quantity.
