Marco was the original proprietor and also had an outpost in the food court on Lake/Clark. I used to eat from the Buggy food truck 2 or 3 times a week (the original food truck, I think) when he made a nice living off of the CME floor trading community (I had a custom burrito named for me I ate there so often).
I still have cravings for a number of his concoctions - like his BBQ chicken, roast beef (with a pasilla pepper sauce that was killer), the Texan with its grilled veggies and a pork that was pure habanero heat. I remember the jerk chicken, but not the fish - maybe he didn't bring it out to the truck. It was a sad day when he left (moved to Mexico), the first next owners stayed pretty true but when it became the deep fried fish/shrimp and then Indian combos, it went downhill fast.
