I split and portion them into triangles. Brush with olive oil and sprinkle salt then smoked paprika, sumac, zaatar, or any combination that strikes my fancy and pantry. Bake, cool, and then serve with homemade baba ganoush or hummus. Doesn't matter if they turn out to be less than fresh using them this way.
