    Anyone kow where to get this in the north suburbs? Also are there differnt types? Sweet/dry. I have tried Jewel Dominicks, Meijer and Binnys in Lake Zurich with no luck...

    I can't promise you'll find it, but I've almost always seen it at both Jewel and Dominick's. I suspect that where you may be going wrong is in where you're looking. Although it is technically considered cooking wine, you won't find it in the wine/liquor section. Look instead in the ethnic or Asian section of the store. By far the most common brand is Kikkoman (like the soy sauce) and it comes in a small clear plastic bottle with a bright red cap. An internet search in Google Images will readily show you what it looks like. If you can't find it easily, the obvious best source would be at Mitsuwa in Arlington Heights where you will, no doubt, have a huge variety of brands to choose from. Good luck!

    It's hard to believe Binny's doesn't have sake (which you can substitute...just ask and use the sweetest one they have). Cook's thesaurus list these other possible substitutes: 1 tablespoon dry sherry + ½ teaspoon sugar OR sherry OR heat two parts sake and one part sugar OR white wine + sugar to taste OR white wine

    The substitutes (other than sake) sound kind of gross...

    Hon mirin contains alcohol, and shin mirin contains less than 1 percent alcohol, according to Wiki.

    Also, Mitsuwa, H-Mart or just about any Asian market, stocks it.

    If you prefer to go the substitute path, I have used dry vermouth with a little sugar added (it should taste sweet) in a pinch. Don't use sweet vermouth; the flavor is wrong. The flavor of dry vermouth, on the other hand, is neutral enough not to throw the recipe out of whack. While it's not an ideal substitute, it's possible that it's something you already have on hand.

    Mitsuwa as suggested is a good resource. There is an organic source available that I now use but is no longer available without salt addition. Salt addition is remove the sale from the ATF jurisdiction and taxes. The supplier had a 50 gal drum of Mirin without salt and I purchased a gallon. Anyway the supplier is http://www.simply-natural.biz/Mirin-Info.php .
    The organic product is far superior to any other.

    I want to make Misoyaki. Several recipes include Mirin. I was seriously bummed to read the ingredient listing on what appears to be the most readily available product around here, Kikkoman's Manjo Aji-Mirin, . . .

    You will find Mirin without salt in the Liquor Department at Mitsuwa except for Sunday until 11am.

    They didn't have much in they way of mirin at Mitsuwa. We found only one option, a bottle of some 12.5% abv.
