    Not near Chicago, but I got some yesterday from a bakery in suburban Atlanta and they were quite good. They called them neopolitan cookies.

    If not, the Costco on Willow has them in their Passover baked goods section.

    Purchased today in the Passover section (near produce) in the Jewel in Skokie near Old Orchard. I suspect this might be a seasonal product, available only around Passover.

    EDIT: I just tried these, and was surprised to note that they don't contain almond paste. So if you're looking for rainbow cookies based on almond paste, don't get these.

    From the worst (in my previous post) to the best. Fortunato Brothers in Brooklyn is widely regarded as THE place in New York City for rainbow cookies. I bought these there yesterday. Pardon their appearance, but I was forced to check my bag with the box of rainbow cookies in it, so they got tumbled around a bit. Despite the trip, they're awesome!
