Eggs are used a lot in the cooking of Lazio and Campania and always having them on hand to make a quick
frittata or to throw together an impromptu
spaghettata is important. A couple of weeks ago, Lucantonius was home from school and he and his old man hadn't really made any plans or preparations for lunch. Luckily, there were eggs and potatoes on hand, a little bit of prosciutto and fresh mozzarella in the fridge. This is what we came up with...
Pizza Finta, that is, a 'fake pizza', with prosciutto, mozzarella, fresh basil, and eggs standing in for the platform:
Patate in padella, that is, potatoes, boiled, then sliced and fried quickly in a pan with a little onion, garlic and marjoram:
