Open less than a week, FinomCoffee is a jewel, co-owner Rafael Esparza an exceptionally nice person and the marrow toast reminded me of my grandmother's cooking, the highest compliment I can offer. I plan on being a regular!

Went to Finom today. I had the marrow toast, and thought it was great! The build out was also great, definitely the type of place you can linger for a while.

LOL - this, from Sula's piece, which was posted this week:

at chicagoreader.com, Mike Sula wrote:After the woman had finished her lecsó sandwich, cherry turnover, and choco-spice latte, she asked if she could take a nap on the couch. At fi rst Rafael Galarza thought she was joking. “So I said, ‘Yeah,’ and she proceeded to take her shoes off, kick her feet up, and knock out for like an hour and a half,” says the chef and co-owner of Finom Coffee.

The "Marrow toast" item lists Veal Brains and Chicken Liver Paste, but no actual marrow. Is this typical? All the recipes I'm finding begin with actual marrow bones.

    From Sula's piece (linked above):

The deceptively titled marrow toast, on the other hand, is a delicate thing of beauty, a smooth composite, not of bone jelly, but veal brain (or "head marrow" in Hungary), chicken liver, and smoky bacon, spread thin across toasted sourdough, bedazzled with sliced watermelon radish and pickled tomato, and showered with cured egg yolk and assorted microflora.

Few better places to relax on a cold blustery Chicago day than Finom Coffee and the warm glow of Rafael 'The Machine' Esparza's charm.
