For better or for worse, I think that when people here use the term "African food," they mean West African food, mainly Nigerian. It's just an impression I have, maybe others disagree. The cuisines of Morocco and Ethiopia are African, of course, but somehow get special designation.
This doesn't address the original post on this thread; just an observation about culinary semanitcs.
