I just posted a new podcast interview with Chef Ben Roche, the pastry chef at Moto. It turns out Ben was the artist behind the LTH raccoon dish at Moto.
Roche talks about Salvador Dali’s influence, collecting smokey vanilla essence with a class 4 laser, and inventing hot ice cream for Albert Adria of El Bulli.

Dined at Moto last weekend, met Ben and the laser. Still gathering my impressions for a post, and trying to figure out whether the photos are worth posting. Long post to follow (that is a teaser). Will say the laser and vanilla were the high point, actually the whole dish.

As a dermatologist, I must say it sounds like going to Moto is not unlike going to my office - a little liquid nitrogen here, a little laser there. Now if he can just figure out a way to add Botox to the meal...
