    About some things I am a purist. When it comes to cheese, however, I think it goes with everything. So if some enterprising cheesemaker wants to layer three kinds together and stud it with fruits and nuts, I'm at least going to give it a try.

    I'm especially fond of what the Brits do with cheese. White Stilton with apricots. Derby with sage. Mature cheddar with Boddingtons draught bitter and Branston pickle. The last was a cheese we stumbled across at a European Imports sale and haven't seen anywhere since. Online searches imply it's either no longer being made or no longer being imported.

    My latest find is something called Red Dragon, a Welsh cheddar with wholegrain mustard seeds and Welsh ale. Wow. Eye-opening, mouth-popping, zesty. Wonderful.

    Turns out it's from the same dairy in Wales, Abergavenny Fine Foods, and same importer, Somerdale International Ltd., as the now unfindable Boddingtons cheese. We picked this one up at Trader Joe's. Get some while you can.

    Wow, cheddar, mustard and ale. Three of the four basic food groups encased in red wax. God bless Wales.

    my husband and i recently discovered this as well. have you tried it on a hot dog? it's incredible!
