I have made some following instructions in the Ball Blue Book Canning Cookbook. I have not seen them commercially, though I wasn't looking for them either.

I regularly buy pickled watermelon rind at various Treasure Island locations, and also at Paulina Market.
By the way, really fine looking steak the other day.

Post #4 - July 3rd, 2006, 4:25 pmI have seen them where Amish Acres jarred goods are sold. (I'm addicted to pickled baby beets) The Farm Market on Higgins at Barrington Road has them as well as the pumpkin patch we visit in Lincolnshire.

We only have pickled watermelon rind once a year, at Thanksgiving, as it was a staple on my father's Thanksgiving table when he was growing up. He and I are the only ones that will touch the stuff. I generally find it in the aisle around the maraschino cherries.
