My husband and I will be going to Trotter's tomorrow night. They've assured me that they can accommodate my veganosity via either the cooked vegetable menu (modified so as to be vegan) or the raw menu. I've heard great things about the vegetable menu, but very little about the raw. Can anyone advise?

i've eaten portions of the raw menu and it was as wonderful as the rest of his food. he originally partnered w/roxanne klein who is the first lady of raw food. they wrote the book "raw" together. i'm sure he's branched out on his own by now, but i'm also sure you'll have nothing to worry about as the same high standards apply.

if you do it, would love a report.

Raw food scares me. First it is not warmed enough to kill any nasties in the food. Also raw food tends to be organic and organic means manure. Lots of nasty things.

The other scary thing about raw food are raw food nuts. They tend to be the people with severe food issues and other issues also. I try to stay away from them.

I know coming down with e coli at CT's is unlikely but it would be a lot less likly if he would cook the food.

    AngrySarah,

I'm confused. You don't eat salad? Or are you saying that raw meats scare you?

    Best,

Is that supposed to be a joke?

My meal at Trotter's was exceptional. While the kitchen was not equipped to do a full raw menu, they incorporated raw dishes into the vegetable menu for me. These included the start and finish to the meal: an amuse gueule of vegetable jellies with a baby cucumber blossom, and a dessert of cashew "cheese" with champagne-infused mango.

How could the kitchen not be equipped to do a full raw menu, when there is very little cooking required...or was it a function of not having the food stuffs on hand?

raw doesn't mean it's not prepared or that you just serve as is. some things you need to sprout which takes time, the cashew cheese for instance, other things need to be made in advance in order for the flavors to mature or solidify, such as the vegetable jellies and so on down the line...

check out his book on the topic and see what it entails.
