Flavor institute?

I remember reading--I thought on this forum, although a search turned up nada--about a flavor institute, possibly in Indiana or southern IL? An intensive class for chefs/restaurant types to learn about the chemistry of flavor...does anyone know the name of the 'school', or has anyone participated in the program?

Yep. I still haven't mastered the art of the LTH search. I typed in every possible incarnation of "flavor institute/class" I thought possible...but not 'flavor university'. Thanks.
