    I am fairly new to LTH but what I've seen so far I love! Anyways, I go to Hot Doug's maybe once a month(it's too far for me to go there on a regular basis) and I'm sometimes intimidated by the specialty sausages there. I'm sure most are worth the money but I would like to know if people have a favorite and describe what they liked so much about what they had. The most memorable special I had at Hot doug's was a Venison sausage with Cherries with grilled onions and Spicy Brown Mustard(suggested by Doug). The Venison tasted great and the cherries adding just that little touch of sweetness that I like.

    From a few people I know, I've heard the rattlesnake is nothing special. Not that it's bad by any means, just that rattlesnake doesn't have a distinct flavor. I've been told to spend my $7-$8 on something else if that's on the menu.

    Thoughts?

    None of this is stuff I haven't said before, but:

    1) The Thuringer, which is on the regular menu, is one of the great things to eat in this city, and it's only $3 or something.

    2) Venison sausages are reliably good; I think pork sausages are reliably good (no surprise there); I'm not a fan of chicken sausage but I think those things are usually thought through pretty well, since they know that a bad dry chicken sausage would be really lame.

    I think otherwise, it all depends on how much you feel like gambling. Things that seem really out there, or too much unlike a regular sausage, probably are-- I don't care for the Teuben (reuben-style sausage), for instance, though I know it has its fans. Where I've very much liked traditional sausages such as the Linguisa when they're on the menu.

    My favorite day to day sausages are the andouille and the thuringer.

    My favorite specials are the linguica and the spanish chorizo. I'm very rarely enamored of the chicken or pork sausages, and so avoid those most of the time. One of my favorite specials at Doug's was a buffalo sausage with blue cheese and wing sauce :)

    Oh, and the foie gras and sauternes sausage is quite special, especially with some tomme and dijonnaise.

    How is the Fwah Graa? I've heard good things. I keep trying to convince myself to try it only to chicken out when I order. Is it gamey? How about the truffle cheese? If enough people on LTH tell me it's worth trying, I think I'll try it today.

    Well, if just one bite of the Fwah Graa sausage makes your Top 10, then I'm off to Hot Doug's to try it.

    I had the alligator sausage with spicy remoulade and hunks of bleu cheese twice last week. Would not hesitate ordering it again when it returns as a special. The sausage was well seasoned and the bleu cheese went especially well with it.

    Mmm...Hot Doug's.. I just ate there today, and while they didn't have any of my favorites, I certainly wasn't disappointed with my lamb, curry sauce, and feta sausage.

    My favorites include the Thai chicken sausage with spicy pepper sauce and sesame seeds, the ribeye sausage with horseradish sauce and my all-time favorite, the lamb with red curry sauce and avocado.

    I don't know how he dreams up his concoctions, but that place is honestly my favorite restaurant in Chicago. I don't think I've ever had a bad meal there, and he continually surprises me with new deliciousness.

    Today I have the Savory Duck Sausage with Green Apple Sauce Moutarde and Fwah Graa "Butter" and the Roasted Apple Chicken Sausage with Cherry-Garlic Chutney. Both were outstanding. Fwah Graa was better than I expected.
    We have the very best Embassy stuff.

    What is "Indiana Jones and the Last Crusade," Alex?

    I've had the veal sausage with dijon mustard and the sausage was spectacular, but overpowered by the mustard. The thuringer is top-notch, and the buffalo was pretty good as well.

    Looking forward to the Fwaa Graaah...

    I was at Hot Doug's yesterday, after my annual cholesterol test (and before the results). I enjoyed the rabbit sausage a lot - better than the boar with cranberries. The duck fat fries were reliably excellent.

    I was at HD's yesterday and tried the Onion Pork on the special board. Like the very simple name suggests it's a tasty Onion/Pork sausage with Milwaukee Stadium Sauce and sharp cheddar. I hadn't had that sauce in years and it was simply delicious.

    Not only did I lick my fingers, I actually licked that sauce off my napkin.

    Had the venison today, with a cassis sauce and a goat gorgonzola. Holy jumpin' Moses, it was good. Better yet, I was having a dickens of a time finding rye rolls for a full metal German dinner I'm making tomorrow, and I asked Doug if he had any ideas, as my usual bakeries up north had failed me. We discussed, he steered me to Dinkel's, and sure enough, they had 'em. Saved me a LOT of time and aggravation. He was even cheerier than usual today, if such a thing is indeed possible.

    It's been around for a while, but it only recently came up in my shuffle play -- Hungry Magazine did a pretty good interview with Doug that folks might enjoy.

    I went there for the first time a few weeks ago and had the gyros sausage. It comes with tzatziki sauce, feta and kalamata olives on top. It was very good, but could have used more sauce. Loved the duck fat fries, too. It's a subtle difference unless you get some of their regular fries to compare it to. Then you notice the richness that the duck fat adds.

    Forgive my ignorance, but what's Milwaukee Stadium Sauce? I mean, I assume it's the house sauce of Milwaukee Stadium, but what's its nature?

    Milwaukee Stadium Sauce is a thin, mild, tomato based barbecue sauce. besides being served on the Brats at Miller Stadium, it is sold locally at most grocery stores.

    Last week when we went I saw a sausage I had never seen on the menu before, and it was damn near an instant favorite:
    Crawfish & Pork sausage w/ spicy shrimp mayo and blue cheese.
    Mmmmmmm!!!!!!!!!!!!!!

    My dad was in town for a few hours on Monday on his way home to St. Louis. When time permits, he always goes to Hot Doug's. We ordered a few sausages to share among three of us:

    1. Smoked Crayfish and Pork Sausage with Spicy Shrimp Mayonnaise and Crumbled Blue Cheese
    2. Savory and Sweet Rabbit Sausage with Sauce Moutarde and White Truffle Cheese
    3. Apple & Cherry Pork Sausage with Cassis Mustard, Blueberry Cheddar Cheese and Pomegranate Seeds
    4. Blue Cheese Pork Sausage with Prickly Pear Cactus Cream and Smoked Almonds
    5. Jennifer Garner with everything


    I must say that items 2-5 were nearly perfect in execution. I had tried several of these on other occasions, but Monday they were all outstanding. The Blue Cheese Pork Sausage was as good as any I've had in recent memory. I can't vouch for number one as I'm allergic to shrimp, but my dad said that it, too, was solid.

    I am a huge fan of the stuff, but must concede that it tastes a lot like Arby's Sauce.
