FYI, we received the new Chicago Magazine in the mail yesterday and, with great interest, I flipped through page after page of profiles of and interviews with Chicago's top chefs. A large portion of the magazine is dedicated to the chefs, including a very interesting Q&A with Bayless, Trotter, Achatz, Paul Kahan, and Carrie Nahabedian. I highly recommend that anyone even remotely interested in the Chicago restaurant scene pick it up.
