    I picked up some Barese sausage at Bari on Saturday and have been trying to think of good ways to prepare it other than putting it in a sauce.

    G Wiv had a nice looking preparation in this thread, but I was wondering if anyone had any other ideas.

    You can use the same methods with Barese but because it's so thin, pre-cooking before grilling is not necessary, just good flame management. If you use it to make sauce or some other dish, be aware that it has a very high garlic content and you might reasonably want to adjust down the amount of garlic elsewhere in any assembled product.

    We've found Barese sausage at the Caputo's on Harlem in Elmwood Park and the Caputo Cheese Market on 15th in Melrose Park. Besides putting them on the grill, we also broil or saute them and then cook in a tomato gravy to serve over fresh pasta.
