We can buy beets and carrots by the 5 kg bag at the Marché Jean-Talon here in Montreal. So, naturally, TODG brings a couple of bags home, and we juice. And we juice. And we juice. She really likes the stuff. I sort of do, too.
Anything you can use to smoosh the beets up--a food processor will work just fine--does the job enough to render cheesecloth a perfect filtration scheme. And the stuff, for some unknown reason, holds in the 'fridge for quite a while before fermentation commences.
Heh-heh, as advised, do NOT drink the beet juice straight! It does the weirdest things to one's throatal systems. You'll think you've been slipped some corrosive substance (and maybe you have!), and that you'll be clearing your throat forevermore. Very odd experience.
