    Missed Paulina by minutes yesterday and I am wanting to start my next batches of sausage today.

    Tried Jewel and Whole Foods.

    What about Fox and Obel? EDIT: Just called and it is a special order from F&O.

    Any ideas?

    Have you tried Chicago Meat or Peoria Packing? They are both open today.

    I was in Peoria yesterday and the guy I asked said they did not have any.

    Is it something that they put out in the room? Or do I need to ask for it?

    Chhicago Meat has Pork Hocks and fat back in a cooler right as you walk i the front door.

    I had to ask for it as I did not see it in any of the cases.

    Looks like you found a source, but in a pinch, Peoria usually has big pieces of pork skin on the tables. When I last made sausage I ended up buying a piece of this and scraping fat off myself at home.
