    I made some sandwich cookies with a ganache-type filling that were quite good, but very, very chocolate-y (I know, not a bad thing). But I was thinking that these could be superb with a mint (not chocolate-mint) filling as well. I'm trying to find a recipe for some kind of icing that would be about the same consistency and texture of ganache (soft, pliable and spreadable when warm, but stiffens up as it cools). Does anyone have any ideas?

    Maybe the same recipe using white chocolate?

    Or look at recipes for homemade peppermint patties which essentially make a frosting out of confectioner's sugar and either corn syrup or evap. milk. The peppermint oil in those recipes can likely be replaced with different flavorings. It will take some experimentation, but it might be what you're looking for.

    Try an internet seach on mint ganache. I found a recipe that calls for heavy cream, white chocolate, creme de menthe and peppermint extract.
