Love, love, love ceviche. But I didn't love it at DelaCosta - though I wanted to. I thought the flavor combinations were a bit weird and didn't all work (for me, at least.) Frontera has a good one, but usually just one on the menu with marlin and olives. National 27 has some good ones, but it is hard for me because there's empanadas there too. I can't get past the empanadas. too. delicious.
You might not think of it, but Joe's Stone Crab has a dynamite, old-school shrimp and scallop ceviche. The only negative is that it comes with saltines instead of tortilla chips. The problem with Joe's is that everything is so good, not just the ceviche. It is hard to go there and not have stone crab, and of course the steak. You might end up spending a lot of money. But you could just go for drinks and ceviche (and a stone crab app.)
