    I just wanted to let everyone know that we've released our fall menu and we are really excited about the new dishes. We are also giving 15 percent off the total bill for anyone who mentions that they read about us on LTH. We really hope to see our blogger buddies and hope that you guys can experience Chaise Lounge for great food, drinks and atmosphere. Just call us at 773.342.1840 and let us know that you are LTH readers like us. We serve food upstairs in the cabanas as well, which is a great retreat during the middle of the week to sit back and relax with some good seasonal food.

    If you are unfamiliar with Chaise Lounge, please check out our menu and website at www.chaiseloungechicago.com. I'm there almost every night and would love to come out and meet you guys and get your feedback.

    While appreciating the welcome behind the offer, I would be uncomfortable posting accounts / reviews in a thread which starts this way. I recommend posting in the "Professional Forum" a few links below next time.

    I have friends that live very near Chaise, and every time I eat with them, this is where they want to go. I have enjoyed everything about Chaise the three times I have been (food (menu, quality and preparation), wine, service, the cabanas, downstairs restaurant.)
    While not a detailed review (I'll make sure I give one next time I go) I just wanted to note that I appreciate when chefs/owners take time to post on this board and appeal to the discusion board/foodie demographic. It also takes some courage to expose your food to the discerning palates, tastes and whims of this board.
    I will be back to Chaise very soon because of this post.

    Hi,

    I was at a bar watching WGN television, when your demo came on. The sound was pretty low, though I am certain you mentioned your grape sauce had Concord grapes. I kept looking at the grapes in your demo as well as the display to not find one Concord grape. I can only assume you simply couldn't find Concord grapes and made a substitution.

    Since the sound was low, you didn't hear that I bought Concord Grapes from Klug Farms stand at the Green City Market and turned them into a jam, which was the sauce on the plate. I also didn't do a good job of mentioning that I used red seedless grapes (which I roast) and fold them into the jam for texture. The flavor strength of the Concords coat the red grapes well and make for a cool presentation, imho. I mentioned in the segment that Concord grapes are difficult to use since they have seeds and are difficult to use whole. YOu also know that they are great this time of year and work well as preserves which was the reason for not using whole. But there was about 15 lbs of Klugs product that I used in my recipe for the jam.

    1. P.E.I mussels with Spiced Pumpkin and Smoked Bacon Broth ($9)

    2. Confit Pork Belly with Green City Market Yellow and Green Beans, Sweet 100 Tomatoes, Padron Peppers and Natural Jus ($9)

    3. Wagyu Beef with Minnesota Wild Rice, Kabocha Squash, Brussels Sprouts and Homemade Cranberry Steak Sauce ($26)

    4. Tinkering with a Lobster Pasta with Togarashi Spice for any Marathoners.

    5. Just made some good Apple upside down cake, which I'm giving away for free to those who ask for it!

I'm personally excited about cooking alongside two of my mentors, Paul Kahan and Elliot Bowles.     I wanted to let everyone know that we have a few seats left for our Hess Wine Dinner on Thursday.     Winter's coming, so we're working on some hearty specials for the next few weeks. I'm ironing out the recipe for Duck Confit Pot Pie and we'll be featuring the Spiced Pumpkin and Smoked Bacon Steamed Mussels this weekend. You guys should get in soon to try my homemade Lamb Sausage with Cassoulet of Navy Beans and Black Turtle Beans. I fold Wild Arugula in for a little spice.

    We are also planning a three-course pre-fixe menu for Tuesday nights, where you get an appetizer, soup or salad as well as entree and dessert for just $25. we'll feautre our famous crab cakes and the wagyu beef. And I'm excited about all three of our desserts that will be available.

    Many customers have been asking about what's in store at Chaise Lounge, so I'll fill everyone in. We have a few specials, most notably our Tuesday $25 Prix-Fixe menu featuring three courses. It's also $5 Martini night, so for $30 you can get a great meal and cocktail. (I was good at math in grade school!)

    We are also working on a new Thanksgiving Turkey special, featuring Crispy organic turkey breast and a braised Turkey leg tamale stuffed with warm cranberry jam and melted Brie. I'll have come creamed haricot verts on the side as well.

    I'm really into charcuterie now too. I bought a sausage stuffer and have been making garlic sausages, merguez and italians for various nightly specials.

    JDY meats hooked me up with some beautiful pork jowls yesterday that I began curing for guanciale. I've got lots of ideas for the coming weeks for those suckers. We are making Kurobota Pancetta in house now too, which should be ready in a few weeks.

    Thanks to all who have come in lately to give us a taste. We love all of the feedback and hope to meet more of you guys soon!
