Thanks for the replies, everyone. I've been to Tony's (the one in Libertyville) and the Daily Grind. I definitely like Tony's better, especially after one of counter guys @ the Daily Grind got a little snippy with me when I declined to take a boneless pork shoulder when I asked for one with the bone-in for pulled pork. Hello, it adds flavor!
I've been in Dorfler's but we went late in the day and were in a rush so I didn't have time to really get the full experience.
I'm really hoping to find a Zier's type place, where I can make a quick dash on a weekend, without making it a 3 hour meat quest.
