    Anyone have a recipe for the type of italian ice they make at Mario's? Love that stuff, especially the watermelon one!

    There's a long chapter on making ices in Harold McGee's book, The Curious Cook. He doesn't specifically address Italian ices, except in a historical context, but he does lay out a system to make ices of virtually any texture and an exceptionally wide variety of fruits.(Pineapple-Avocado ice, anyone?)

    I got a hankering for Mario's style watermelon ices too, hoping someone has been successful in the past 4 years! The first link in the reply upthread is no longer alive.
