Anyone know what this cheese is called?

    God I love that stuff, i first had it at the Market last year and now see it at several places...not as good as what i bought there last year though

    Interestingly enough, I found something called "Mexican Frying Cheese" (Queso de freir) on the packet - with other packaged mexican cheeses. I tried grilling it, and lo and behold it was basically the same as the Brunkow stuff, (came out of the package a little wetter) but waaaay less expensive.

    Part of me wonders that, if you put the cheese in a pop-up toaster on a medium setting, it wouldn't do fine. It's not really a runny cheese, and has a rather squeaky texture. (My work doesn't have a toaster oven, just pop-up toasters, so you see where my thoughts are headed . . . on the other hand, I don't want to be the jackass to break the toaster heating up Brunkow cheese.)

    I would think that you could experiment with the popup toaster. Toast part of it, rather than the whole thing. If you monitor it, I think you'd know if something bad was about to happen.

    I don't think anything too bad would happen, but it would likely make a mess of the toaster. I cooked up some Brunkow in a pan last weekend, and it left a fair amount of grease in the pan. In a popup toaster, that grease would gunk up crumb tray & the little arm-dealies that hold the bread steady, and would eventually start to burn.
